About our coffee:

Our decaffeinated coffee is a special Castillo variety grown at an altitude of 1960 M.A.S.L., offering a unique fusion of flavors and flavors. The coffee cherries are carefully picked according to their optimal degree of maturity and then disinfected with ozone to ensure cleanliness and quality. Our unique anaerobic fermentation technique, which uses yeast Paraiso Yellow Fruit, brings out the lush fruitiness and juicy caramel notes in coffee.

The coffee beans are then washed with a special fermentation process that gives them a rich, full-bodied aroma of apple and pear and a flavor profile of star fruit with a hint of apricot. Diego's thermal shock technique then ensures an ideal transition of the flavors into the bean and ensures remarkable taste stability. After fermentation, the beans are dried in a dehumidifier to preserve their soft notes and prevent over-oxidation.
